Victorian Style Wedding Cake
by Marthie vd Zandt
(Malmesbury, Western Cape, South Africa)
This Victorian Style wedding cake is the 4th wedding cake I made.
The sizes of the cakes and dummies were from bottom to top: 14”, 12”, 10”, 8” and 6”. The 3 bottom layers were double chocolate mud cakes with a chocolate fudge filling. The 2 top layers and vase were dummies. I molded the top peace of polystyrene to look like a vase and arranged the roses in it.
All the roses, leaves and frills were made out of gum paste beforehand. The cakes were covered with butter cream and I refrigerated it to firm up then I covered all the cakes and dummies with fondant.
The next step was to measure and mark the positions and attach the frills. After marking the positions for the swags and dots, I decorated it with royal icing. Lastly I have attached the small roses and leaves and finished the last bit of decorating with royal icing.
The cake board was covered with satin and the bride supplied it.
This cake was quite a challenge, but I enjoyed every moment of it!
