Train Birthday Cakes
by Dawn Westermann
(Blue Bell, PA)
To make these train birthday cakes, I used 4 loaf pound cakes and 6 cans of frosting(which I colored), pretzel logs, chocolate covered peanuts(for the coal car), an ice cream cone for the smoke stack, Oreo cookies for the wheels with M&M's, and black licorice nubs for between the cars and smoke stack on the caboose.
I used a long board covered with foil, piped with track, green frosting and green colored coconut for grass. I used wheat-thin crackers for the windows.
I cut the cake into 3 cars, using a small portion for the caboose. I frosted them entirely, then piped the edges, and set them on the track. The wheels were added last.
The engine bottom was one entire cake, with smaller pieces cut and attached with frosting and tooth picks. (FYI- frost the pieces individually, then attach).
