Sugarpaste maybe too thick?
by Jill Dean
(Kent)
Hi There, I have only recently started to make cakes and am following instructions to the t re covering with sugarpaste etc. Most people seem fine with my cakes, however the last friend I made one for said it was too sweet.
I know it can't be the sponge as she has had many a victoria sponge of mine, so can only think it is all the icing around it.
I have read in Planet cake books that they put a thin layer of chocolate ganache around the cake so it is a smoother base for a thinner layer of sugarpaste, but didn't think the chocolate layer would actually go with the sponge. Can anyone give me any tips/advice on this as I don't know whether this is a common problem. I roll it out to an eighth of an inch at present.
By the way, if the way to go is to use chocolate ganache to prime the outside of the cake first, do you use milk chocolate for the vanilla sponge and milk only for chocolate cake? Many Thanks in advance to all you experts out there :)
