Reduced Sugar Carrot Cake

I made a Reduced Sugar Carrot Cake, with cream cheese frosting for my dad's birthday! The cake was delicious and made with splenda, and the icing was made with sugar free cheesecake pudding and whipping cream. My father is a diabetic and has to watch his sugar so this cake hit the spot.

Carrot cake is his favorite, and I made this from scratch with real shredded carrots, and also crushed pineapple for moistness. It was delicious!

I decorated it with cute carrots, it was fun!

My dad is also diabetic. But his favorite is cherry pie... not sure how to do that one! lol
