Octopus Cake
by Susan Shearer
(Hollister, CA)
I made this mascot cake for a med school graduation party. It is made with 12 inch round cake pans, 3 layers of vanilla flavored cake, torted and filled with lemon curd. The cakes were stacked and covered in blue/green fondant.
Octavius' head is made with rice krispies treats, shaped and molded into a ball then covered with a light layer of buttercream and then fondant.
His tentacles are made by rolling green colored fondant into "snake" shapes and placed accordingly on the cake first, then the head placed onto those.
Next, I made little white fondant balls, placed them on the tentacles and then pushed sequins into them for his suction cups.
Glasses, hat, eyes, mouth were all made with fondant. The seashells were made from a Wilton mold kit bought at a local craft store. He is holding a sign and diploma with medical beaker, but you could use any theme you wanted in place of these.
This was probably the most fun cake I have ever made! People at the party loved Octavius so much, they didn't want to cut and eat him! :)
