Mud Cake with Chocolate Icing
by Julia
(Melbourne)
This cake is a kind of a mud cake. I took the recipe for the cake from the Julie Goodwin's "Our family table" book.
First I added the 125g cocoa powder in a bowl and mixed it with the 375ml boiling water and stirred until smooth and set it aside to cool.
Then batted the 180g unsalted butter and 550g caster sugar until smooth and added the 3 eggs one at a time. Added the 1/2 sugar.
In a separate dish mixed the 1855ml milk with a 2 tsp of white vineger.
Then mixed the 450g shifted self raising flour and the milk as 1 cup of flour and 1/4 cup of milk and stir and followed the same with the remaining flour and milk, then added the cocoa mixture.
Then I baked the cake in a square and circle trays.
Then I prepared the icing. I got this recipe from internet.
Mixed the cocoa powder, shifted icing sugar, a few pieces of the dark chocolate and added the boiling water gradually and stirred until smooth and left it to cool.
After the cake became cooler I poured the icing mixture on top of it to flow down and set.
Then I melted a few pieces of white chocolate and spooned that into a very small icing nozzle and drizzled on top of the cocoa icing, then scrapped a bit of white chocolate on top of it
Finally added the strawberry pieces on top of the cake
