Moko Birthday Cake
by Vicky Kara
(New Zealand)
First time birthday cake decorator and first time ever doing a fondant cake. This massive creation is a 2 tier layered castle cake & especially made for our beautiful lil moko who has just turned 1 years old.
Both cakes are vanilla rainbow colored centers with butter icing filling, covered in pale pink fondant, I used a baking textured mat to create the cobbled stone effect, just like a princess castle :)
The bottom is 4 separate colors of layered cake (red, blue, green, yellow), used 12inch round cake tin, the top is all four colors, separate colored mixtures were poured into a 9 inch round cake tin.
Decorations are kept simple & believe it or not I didn't add flowers!!! ran outta time.
The green icing is grass using tip#233, made a few scattered butterflies out of assorted colored fondant & I had to buy the 6 lil fairy statues sitting on the base.
I made a white fur bear out of fondant, used a edible black pen to color bears eyes & nose, this was the cake topper, bought a crystal "M" letter to sit in front of fur bear.
There is also 2 heart shaped lollie cakes covered in purple fondant on each side of castle cake, I used a printed design roller to indent fondant, both cakes are adorned with princess glass slippers & a princess tiara, added ferrero rocher chocolates to sit inside slippers & tiara.
I bought the castle kit from Wilton, contains the turrents, roof, door & window. I've covered the turrents & roofs in cobbled stone pink & purple fondant.
Simple pink icing around door
There's this neat lil stick brush I bought, this holds the edible glitter & you brush it on, I only brushed the roofs with a light dusting of silver glitter.
This cake traveled 20km away & I wanted it setup so we weren't fluffing round when we all arrived, I made holes at the bottom of the turrents including the base ones & inserted dowels.
Sticking them with icing was not going to hold them straight for the journey.
There is one super large dowel holding the top cake up off the bottom, I have a cake board under that top cake.
The top tallest turrent was the only lil bit wobbly one out of the lot!
Re-secured & adjusted bottom with pink tube icing when we got to our destination.
I attempted to make a tree, that's fondant too, with fondant leaves, was suppose to do piping bag leaves to finish BUT ran outta time so that's the part forest tree in autumn ;)
Giving thanks to all my cake baking & decorations tutors YOUTUBE & GOOGLE, yes that's right, I learned the lot by studying everyone's video's on youtube & reading google forums etc.
I studied hard out a full month prior to making this cake, all in between my normal 16 hour working days & weekends. (I took 2 days off work specifically for this).
Prep time from start to finish was 2 full days & nights, a whopping 20 hours the first day & round da bout 12 hours following day...gheesh, next time I'll make sure i take the whole week off !
