Use the biggest knife or spatula you can comfortably handle.
If I'm going to ice it smooth I get a big bowl or glass cup of boiling water and after I smooth on part, I dip the knife in the water and get it really hot. Wipe off the water and icing and go again until it's done.

When I started to do cake decoration by learning from books, it is not that simple to ice a cake smoothly as the one done by professional cake decorator. I tried on my own for months just couldn't achieve that techique. Finally, I took a cake decoration course. As you can see from the projects that I have done it really makes a lot of difference.
