Checkerboard Easter Cake
by Kelly H.

This Easter cake is a great sponge cake, (can be decorated to anything) not just Easter.
Make your chocolate and vanilla sponge,
heat oven, and prepare your cake tins, you will need 3 cake tins, line the bottom with baking paper.
You will need 2 icing bags, fill 1 bag with the chocolate sponge and the other with the vanilla sponge.
Pipe 2 of the tins starting with the chocolate cake mix, pipe the outer layer (a circle) then pipe a circle of vanilla mix, and so on until you come to the middle. I had 5 circles, (chocolate, vanilla, chocolate, vanilla & chocolate).
Then with your last tin do the same again but the opposite way round starting with the vanilla cake mix first, (this will be the middle of your cake)
bake and allow to cool until cold.
The cake will rise so you will need to trim the top layer off each cake to make a flat surface on all 3 cakes.
Use some strawberry jam ( or what flavor you like) and sandwich together, then with what ever cream your using cover the outer cake and decorate.
